I had success with a similar application using a pneumatic
cylinder as the sensor.  As the weight increased, the air in
the cylinder was compressed - easily converted into an
electrical signal with a bellows activated potentiometer.  The
cylinder and the bellows were connected with a length of Tygon
tubing.
